My name is Charles Scandrett and I am researching a book on controlling critical kinetic models in small brewing"
I am interested in any papers and research on rates of reactions in brewing and factors controlling them. I have some fascinating Food Science papers on Maillard reactions which all maltsters would be interested in. I have a lot of work on ester formation which is commonly misunderstood. I am interested in Ferulic acid release, phenol composition and concentration during lauter,and volatile extraction rates in conventional kettle and fountain boils.
Anybody have research they would like to share?
